PKU friendly puff pastries

Hi everyone! A few weeks ago I've ordered a big box full of goods from  PKU Shop . In the package were cheeses from  Violife Foods , gluten free pasta, low protein rice from  Aproten Chicchi , low protein pasta stars from Aproten too, organic bechamel (rice based) sauce, cacao balls, coconut milk in powder and LOW PROTEIN GLUTEN FREE PUFF PASTRY!!!     I've never eaten gluten free puff pastry, I don't even remember the taste of the basic one, made using wheat and butter. To be honest, the composition is not the best, but once in a while it won't hurt, won't it? Mine puff pastry is from  Balviten , but once I saw gluten-free puff pastry from  Schar Gluten Free  and from  Genius Gluten Free , but they aren't available in my town:( The gluten free puff pastry, even when we know it's not always the healthiest option:), is a perfect solution when we have no time to prepare something tasty in a couple of minutes! You can fill it with your favo...

Banana chunks in coconut batter with chocolate sauce

Hi everyone! Do you like Indian food? Indian food is very aromatic, rich in colours and includes a lot of healthy veggies, which makes it perfect for PKUers! It's also really spicy and hot, so I  m u s t  n o t  eat it on my diet:) For those of you who don't mind hot spices or love spicy food, Indian cuisine is a good choice. What's your favorite Indian dish? Maybe dahl,  veggie korma, curry, flat breads called 'naans', papadams or samosas? Mine are definitely bananas in coconut batter, but in tummy friendly version without frying in deep oil! Did you know that Indians love very sweet desserts? I'm not a huge fan of very sweet desserts, but I absolutely love bananas in coconut batter! This recipe is inspired by an Indian dish called 'pakora', but I've used bananas instead of veggies, replaced chickpea flour with gluten free mix and I've fried them on dry pancake pan instead of frying in deep oil.   Coconut milk batter, banana and chocolate are su...

Cheesy mashed potatoes for ill tummy

Hi guys! Have you ever heard about potato diet? This is a special medical diet used in gastrointestinal diseases, chronic renal failure and  in low protein diet. The base of this diet are potatoes in a lot of forms - cooked, puree, chips, baked potatoes, jacket potatoes etc.  Potatoes are a great source of potassium and are really healthy! They are easily digestible and they can help in digestive problems. When we cool down the potatoes, they contain bigger amount of resistant starch, which isn't digested in the intestines and becomes a a kind of prebiotic - foodie for good bacteria inhabiting our guts. What about you? What is your favorite potatoe dish? Write in comments:) Mine is definitely potato pur é e! If you like potatoes and you need some extra calories, you will love my recipe for cheesy mashed potatoes, perfect for dinner, lunch or supper:) Look at this enormous bittern! It's really photogenic, isn't it? What you need: ♡peeled potatoes ♡ one tbsp of lactose-free b...

Creamy rice with banana purée and chocolate

Hi everyone! Have you ever eaten 'rice on milk'? In my country it's quite popular dish. When I was little, my mum used to make rice with cow's milk for breakfast and it was one of my favourite meals before school. Now, I can't eat lactose, so I mustn't use normal milk and I have to replace it with lactose free dairy products (occasionally) or base on plant based drink (very often). When you prepare 'the rice on milk' using plant based or lactose free cream instead of using the cow's one, you can easily make gut friendly version of this yummy meal. Today I'm going to show you a recipe for a meal which I usually eat in exacerbation. It's creamy rice with banana purée and a little bit of chocolate!  My rice pudding is creamy and rich in taste. Not vegan, but free from lactose, gluten and low fodmap, tasty, very delicate and easy to digest. Perfect for slow breakie, supper or a tea:)  I'm sorry that I didn't give the exact proportions, bu...

PKU friendly creamy coconut&tomato sauce

Hi guys! Today I have asked you a question on my page on Instagram about my today's dinner. I've made something nice - creamy pasta with tomato sauce and coconut cream. The connection of tomatoes and coconut cream may sounds weird, but I swear it is easy-peasy and extremely delicious. My idea has its roots in Marta Dymek 's blog called  Jadłonomia . If we translate it into English, it will be Foodnomy:) Marta has created a soup made of fresh tomatoes and she has added a little bit of coconut milk to make the soup creamier and milder in taste. Check it for more inspirations - a lot of yummy plant based options for vegans and PKUers!  My sauce is a little bit sweet, really creamy and fits perfectly to any pasta, including low protein. Perfect when you are late or have no time to prepare a meal.  My family also love this sauce, even my dad (who is a traditionalist and he really likes meat) enjoys it:)  For myself, I've added chicken breast and I blended it into the sauc...

Summer crumpets with raspberries

Hello everyone! Today's morning I've brought some juicy raspberries from my garden. I  was wondering and wondering what yummy to eat can I make with them and suddenly, I thought about raspberry crumpets! The recipe is really easy and the crumpets are so fluffy and soft. I swear you will love them! I'm using   this  universal mix which I usually buy over the Internet or in Rossmann. For those on medical low protein diet (phenylketonuria, homocystinuria, maple syrup urine disease etc.): you can easily replace the flour I've used in this recipe to your suitable low protein flour and replace an egg with an egg substitute. Crumpets are really delicious, fluffy and they aren't very fatty:) They taste perfect with a little bit of powdered sugar and some extra raspberries! I know that using ready-to-use mixes isn't always the best option when we are talking about h e a l t h y gluten free diet. It's always better to use natural gluten free grains and seeds, for exa...

Sweet lavender buns

Hi everyone! Today I've created something really delicious - cinnamon buns with maple syrup! I was inspired by another BezBez.pl 's recipe for  Vegan Pumpkin Cinnamon Buns  but I changed a lot the recipe:) I don't want to rewrite the recipe, I just want to share with you something very nice and I hope it would help you to eat good having dietary restrictions. The buns are the best fresh from the oven, but if you can't eat all of them on the day of baking, you can put them into the refrigerator. When you fancy a fresh cinnamon bun, you just have to put it into the microwave or oven and bake for 5 minutes until it becomes fluffy and soft again.  Who doesn't love cinnamon? My mum, dad and brother also are big fans of cinnamon and I don't need winter or autumn to make cinnamon flavored goodies for my family:) My mum also has tried one and said 'Oh, it's so yummy!' so I'm very happy that my family also enjoy gluten free food!  Although the buns are gl...
