Turkey meatballs with creamy sweet potato purée

Hi everyone!
Today I'm going to show you a recipe for easily digestible dinner - turkey meatballs with creamy sweet potato purée. This is my Mum's recipe, so I promise you will enjoy it!☺

As we know, meatballs won't be the best choice for people on a low protein diet, but I think that this creamy, cheesy sweet potato puree is perfect for them! I replaced some amount of regular potatoes with sweet potato, which is lower in protein and I've used Violife's vegan cheese, which doesn't contain any protein! ☺

Regular potato (cooked in water) 

1,80 g of protein 
80 mg of Phe

Sweet potato

1,57 g of protein
89 mg of Phe

Hmm...Could someone explain me why the sweet potatoes are higher in Phe that the regular potatoes, although they contain smaller amount of protein?

Anyway, here's the recipe!☺



What you need:

MEATBALLS

♡500 g of ground turkey meat
♡50 g of uncooked rice
♡2 headed tbsp of gluten free bread crumbs
♡1 egg
♡salt&pepper
♡green parsley or dill

SWEET POTATO PUREE

♡3 white potatoes (or more)
♡1 small sweet potato (or more)
♡a pinch of salt
♡1 generous handful of grated vegan cheese (I used Block For Pizza from Violife)
♡1 tbsp of lactose free butter
♡and tomato sauce (I used the tomato sauce with pumpkin purée)

What you need to do:

MEATBALLS

1. Firstly, cook the rice in salted water until it become soft. Drain when it's ready.

2. Meanwhile, mix turkey with an egg, salt, pepper, chopped parsley and the bread crumbs. Add the cooked rice into it and stir thoroughly. Form meatballs.

3. Place a strainer or a sieve over a pot of boiling water. Place the meatballs, cover with a lid and wait for the steam to come out of the holes. Let them cook for about 20-25 minutes. Serve with tomato sauce and sweet potato purée. Enjoy!☺

SWEET POTATO PUREE

1. Peel of the sweet potato and white potatoes. Cut into smaller chunks and cook in salted water until they become soft.

2. Drain the water. Mash the potatoes and add cheese, butter and salt. Mash again. Serve with meatballs and sauce or on its own. Enjoy!☺

PKU friendly strawberry rice

Hello! Today I'm sharing with you two recipes in one: for PKUers and for people who must eat a lot of protein. I promise each version is very tasty! Banana chunks in coconut batter with chocolate sauce

Hi everyone! Do you like Indian food? Indian food is very aromatic, rich in colours and includes a lot of healthy veggies, which makes it perfect for PKUers!
