Lactose free cheesecake with chocolate dripping

Hi everyone! Who likes cheesecakes? I've never been a big fan of cheesecakes, but today's cake is so delicious! If you like cottage cheese, chocolate and p o t a t o e s you won't be disappointed. Potatoes, you say? Yes! Potatoes are great when you want to eat a fluffy and delicate cheesecake. It's also a cheaper version of traditional cake, because you need smaller amount of the cottage cheese☺ My cheesecake is a great source of protein, so important in inflammatory bowel diseases. Our guts aren't able to absorb nutrients from food - they have a bigger permeability compared to guts of a healthy person. We must eat more complete protein, when complete equals animal protein. We usually source them from dairy products, like milk, cheese and yoghurt, eggs or lean meat, like turkey or chicken.  My cheesecake is full of eggs, butter and cottage cheese, so it's a perfect choice for malnourished people. Cheesecake from my recipe is also easy to digest and high in calor...

PKU friendly puff pastries

Hi everyone! A few weeks ago I've ordered a big box full of goods from  PKU Shop . To be honest, the composition is not the best, but once in a while it won't hurt, won't it? Mine puff pastry is from  Balviten , but once I saw gluten-free puff pastry from  Schar Gluten Free  and from  Genius Gluten Free , but they aren't available in my town:( The gluten free puff pastry, even when we know it's not always the healthiest option:), is a perfect solution when we have no time to prepare something tasty in a couple of minutes! You can fill it with your favo...

Banana chunks in coconut batter with chocolate sauce

Hi everyone! Do you like Indian food? Indian food is very aromatic, rich in colours and includes a lot of healthy veggies, which makes it perfect for PKUers! It's also really spicy and hot, so I  m u s t  n o t  eat it on my diet:) For those of you who don't mind hot spices or love spicy food, Indian cuisine is a good choice. What's your favorite Indian dish? Maybe dahl,  veggie korma, curry, flat breads called 'naans', papadams or samosas? Mine are definitely bananas in coconut batter, but in tummy friendly version without frying in deep oil! Did you know that Indians love very sweet desserts? I'm not a huge fan of very sweet desserts, but I absolutely love bananas in coconut batter! This recipe is inspired by an Indian dish called 'pakora', but I've used bananas instead of veggies, replaced chickpea flour with gluten free mix and I've fried them on dry pancake pan instead of frying in deep oil.   Coconut milk batter, banana and chocolate are su...

Cheesy mashed potatoes for ill tummy

Hi guys! Have you ever heard about potato diet? This is a special medical diet used in gastrointestinal diseases, chronic renal failure and  in low protein diet. The base of this diet are potatoes in a lot of forms - cooked, puree, chips, baked potatoes, jacket potatoes etc.  Potatoes are a great source of potassium and are really healthy! They are easily digestible and they can help in digestive problems. When we cool down the potatoes, they contain bigger amount of resistant starch, which isn't digested in the intestines and becomes a a kind of prebiotic - foodie for good bacteria inhabiting our guts. What about you? What is your favorite potatoe dish? Write in comments:) Mine is definitely potato pur é e! If you like potatoes and you need some extra calories, you will love my recipe for cheesy mashed potatoes, perfect for dinner, lunch or supper:) Look at this enormous bittern! It's really photogenic, isn't it? What you need: ♡peeled potatoes ♡ one tbsp of lactose-free b...

Creamy rice with banana purée and chocolate

Hi everyone! Have you ever eaten 'rice on milk'? In my country it's quite popular dish. When I was little, my mum used to make rice with cow's milk for breakfast and it was one of my favourite meals before school. Now, I can't eat lactose, so I mustn't use normal milk and I have to replace it with lactose free dairy products (occasionally) or base on plant based drink (very often). When you prepare 'the rice on milk' using plant based or lactose free cream instead of using the cow's one, you can easily make gut friendly version of this yummy meal. Today I'm going to show you a recipe for a meal which I usually eat in exacerbation. It's creamy rice with banana purée and a little bit of chocolate!  My rice pudding is creamy and rich in taste. Not vegan, but free from lactose, gluten and low fodmap, tasty, very delicate and easy to digest. Perfect for slow breakie, supper or a tea:)  I'm sorry that I didn't give the exact proportions, bu...
