Have you ever heard about potato diet? This is a special medical diet used in gastrointestinal diseases, chronic renal failure and in low protein diet. The base of this diet are potatoes in a lot of forms - cooked, puree, chips, baked potatoes, jacket potatoes etc.
Potatoes are a great source of potassium and are really healthy! They are easily digestible and they can help in digestive problems. When we cool down the potatoes, they contain bigger amount of resistant starch, which isn't digested in the intestines and becomes a a kind of prebiotic - foodie for good bacteria inhabiting our guts.

What you need:
♡peeled potatoes
♡ one tbsp of lactose-free butter
♡one big handful of shredded vegan cheese (I usually use Violife's mozarella or pizza style cheese)
♡salt to taste
What you need to do:
1. Cook the potatoes with a pinch of salt.♡
2. Drain and add butter and cheese. Add a little bit of salt if you like saltier meals, but remember - the cheese is also salty! ♡
3. Mash the ingredients (the cheese should melt nicely).♡
4. Cheesy mashed potatoes are ready to eat!♡
