Summer crumpets with raspberries

Hello everyone!
Today's morning I've brought some juicy raspberries from my garden. I  was wondering and wondering what yummy to eat can I make with them and suddenly, I thought about raspberry crumpets! The recipe is really easy and the crumpets are so fluffy and soft. I swear you will love them!

I'm using  this universal mix which I usually buy over the Internet or in Rossmann. For those on medical low protein diet (phenylketonuria, homocystinuria, maple syrup urine disease etc.): you can easily replace the flour I've used in this recipe to your suitable low protein flour and replace an egg with an egg substitute.

Crumpets are really delicious, fluffy and they aren't very fatty:) They taste perfect with a little bit of powdered sugar and some extra raspberries!

I know that using ready-to-use mixes isn't always the best option when we are talking about h e a l t h y gluten free diet. It's always better to use natural gluten free grains and seeds, for example millet, gluten free oats, corn, rice, chickpea, buckwheat, sorgo, amaranth, tapioca, flaxseed etc. 

But, to be honest, not everyone can eat all of them and may suffer because of eating some of them. I feel bad when I eat bigger amounts of chickpea flour and oats. In my case, using gluten-free mixes is just healthier and it gives less digestive discomfort, that's why I use them:)

What you need: 

For 7-8 crumpets
♡1 large egg/ 2 teaspoons of egg substitute plus 40 ml of water
♡5 headed tbsp of universal gluten-free mix/ LP flour
♡a pinch of salt
♡ 50 ml of rice vanilla flavored milk/LP milk
♡1 handful of raspberries
♡1 teaspoon of gluten free vanilla pudding in powder
♡2 tbsp of melted lactose free butter/oil/melted margarine
♡1/4 teaspoon of gluten free baking powder
♡1 tablespoon of maple syrup or sugar (skip if you have very sweet raspberries, my were quite sour) 

What you need to do:
 
1. Beat the whites with a pinch of salt for a stiff foam.
* LP version: beat the egg substitute with water until you remove the lumps.♡

2. In the other bowl mix yolks with flour, milk, pudding powder, sugar/maple syrup, baking powder and 1 tbsp of butter. Next, add whites and stir gently. Add raspberries, stir again. 
*LP version: Mix that ingredients with egg substitute and water mixture. Add raspberries and stir gently again♡  

3. Fry on a greased pancake pan under a lid. Serve with powdered sugar and extra raspberries! Enjoy!♡

Raisin loaf with sweet crumbles

Hi everyone!☺️ Are there any raisin lovers? Or yeast cake lovers? I know that people are divided into raisin lovers and raisin haters! I like raisins, they are full of magnesium, potassium and boron. Did you know that raisins contain resveratrol, an antioxidant that protects cells against damage? They also contain fiber (3,7 g per 100 g), so IBD people must be careful of big amounts of them in their diet.  Today I want to share with you a recipe for delicious gluten and dairy free yeast loaf with raisins and sweet crumbles! Alina-PKU's cinnamon rolls

Hi there! Yesterday, I tried to make cinnamon rolls from the recipe which I had found on Instagram account alina_pku! Alina's version is PKU friendly and low protein. I have changed some of the ingredients and made higher in Phe but still delicious cakes. Alina's recipe is made with 800 g of flour but I divided this amount by 4. What you need: 200 g Schar gluten-free flour Mix B* 18,5 g vanilla pudding in powder 4 g dry yeast 17,5 g white sugar 30 g butter* 25 ml water 1 tiny egg* 125 ml soy/rice milk* 50 g  butter 75 g white sugar* 1,25 teaspoon of cinnamon *Alina used low protein flour, margarine, egg replacer, oat milk and brown sugar.   What you need to do: 1. Cook milk. Meanwhile, mix pudding powder with water. Add the mixture to the cooking milk. Stir until you get the consistency of pudding.♡ 2. Add butter, sugar and beaten egg to the pudding.
