Perfectly fluffy sponge cake

Hi everyone!

Today I'm going to show you a recipe for perfectly fluffy sponge cake without gluten and dairy. I hope you will enjoy! 

I have been suffering from an exacerbation of my guts for three days. Today I have ate baby groats with butter and rice flakes with cooked apple, but yesterday I baked a delicious gluten free sponge cake. It's fluffy, easy to digest and really tasty! Perfect when you want to eat something sweet, but your diet is 
v e r y restrictive .

My mum has said 'It tastes perfect!'☺Mum isn't a huge fan of sweet things, however she has really enjoyed it! 

Lightly sweet, fluffy, delicate, gluten free, dairy free, lactose free and easily digestible. Oh, and allowed in exacerbation, of course! What more can you expect from a cake?☺

What do you usually eat when you are in exacerbation? My diet is very restrictive now and I eat rice, baby groats, cooked meat, potatoes, carrot soup, cooked apples and...that's all! ☺

Look a this fluffiness! ☺


What you need:

♡3 eggs (whites and yolks separately)
♡1 tbsp of corn flour
♡2 tbsp of gluten free universal mix (I used Mehl Farine from Schar)
♡a pinch of salt
♡1 teaspoon of apple vinegar
♡1/4 teaspoon of baking powder
♡2 tbsp of sugar

What you need to do:

1. Firstly, preheat the oven to 180 degrees C/356 degrees F. The oven must be very hot when you put the cake into it. ♡

2. Secondly, beat the whites with a pinch of salt for a stiff foam. In a cup mix yolks with apple vinegar.♡

3. Gently add yolks into foam, stir gently. Add universal mix, corn flour, sugar and baking powder. Stir gently using mixer drills, but out of power. ♡

4. Put the cake into a mold lined with baking paper. I usually soak the paper and squeeze it out of excess water, it adheres better ☺

5. Bake for about 20 minutes until a bamboo skewer stick is dry when you stick it into the sponge cake.♡

6. Leave the cake to cool down. The sponge cake may come off a bit, but it's still so yummy! Tastes perfect with jam, butter or without any toppings. Enjoy! ♡

PKU friendly strawberry rice

Hello! Today I'm sharing with you two recipes in one: for PKUers and for people who must eat a lot of protein. I promise each version is very tasty! Banana chunks in coconut batter with chocolate sauce

Hi everyone! Do you like Indian food? Indian food is very aromatic, rich in colours and includes a lot of healthy veggies, which makes it perfect for PKUers!
