Chocolate chip zucchini muffins (vegan, gluten free)

Hi everyone! Who wouldn't like a delicious little muffin? And what if I say there's a zucchini in it? Yes, you heard it - zucchini☺ Gluten free, dairy free, vegan and with hidden veggies inside!  This recipe is inspired by  Allergic's Mum is Cooking  for  Sweet Zucchini Muffins , but I've replaced wheat flour with the mixture of rice flour, gluten free oat flour, corn flour and potato starch. I've also replaced apple juice with rice vanilla milk and added chocolate. Original recipe is here! Sweet Zucchini Muffins Here's my version!             What you need: For 9 muffins ♡240 g of gluten free flours* (I used 100 g of rice flour, 50 g of potato starch, 40 g of gluten free oat ♡flour and of 50 g of corn flour) ♡150 g* of peeled yellow zucchini, grated on vegatable's grater's small eyes  (with lightly squeezed juice) ♡50 ml of vanilla rice milk ♡1 tbsp of natural apple vinegar ♡50 ml of oil ♡80 g of sugar ♡1 small teaspoon of baking powder ♡a half of teasp

Rosemary pollock with Parmesan mashed potatoes

Hi everyone! In the photo you can see my today's lunch ☺ My mum has made the fish and I've prepared the mashed potatoes☺   Today I'm going to show you my Mum's recipe for buttery pollock fillet with rosemary, butter and mashed potatoes with vegan Parmesan style cheese.☺  To prepare the mashed potatoes, I used Violife's Prosiciano Wedge Parmesan style cheese, but any vegan cheese will do. This is a very simple and tasty way to prepare fish in easily digestible version. Cinnamon apples and rice

Hi everyone! ☺ Today I'm going to show you a recipe for a delicious milky rice with cinnamon roasted apples. I'm sure  you will like it! It's a really quick and easy recipe if you have cooked rice from dinner and a jar of roasted apples.  Here  you can find my recipe for it. You can easily use cooked low protein rice and low protein or coconut milk instead of regular rice and rice milk to make a PKU & HCU friendly version of this dish! ☺ Here's the recipe! ☺ What you need: ♡cooked white rice/ low protein rice ♡rice&vanilla milk/ low protein milk ♡a pinch of salt ♡a little bit of lactose free butter or margarine* ♡a few teaspoons of apple jam with cinnamon * if you don't need to increase calories, skip What you need to do: 1. Firstly, add the rice, salt, butter and milk into the small pot and heat.♡ 2. Put it into a bowl, add jam and enjoy!☺♡

Roasted apples with cinnamon

Hi everyone! What is your favourite fruit? Mine is definitely banana, berries and roasted apples!  Yesterday my grandpa gave us a lot of small apples from his and granny's garden. They are quite sour, but they are so aromatic! So, I created a really delicious thing - roasted apples with cinnamon and brown sugar☺Perfect for apple pie, toasts, sandwiches, pancakes and rice. I love the spicy scent of cinnamon and warmth of baked apples with wrinkled skin! My granny also loves apples☺She usually streaks the apples, mix with cinnamon, lemon juice and sugar and make a really yummy jam, perfect for her signature apple pie! Granny makes the apple pie using wheat flour, but she and I are thinking about making a gluten free version, so stay tuned☺ Today my auntie has brought us a freshly baked apple pie from my granny. Turkey meatballs with creamy sweet potato purée

Hi everyone! Today I'm going to show you a recipe for easily digestible dinner - turkey meatballs with creamy sweet potato purée. This is my Mum's recipe, so I promise you will enjoy it!☺ As we know, meatballs won't be the best choice for people on a low protein diet, but I think that this creamy, cheesy sweet potato puree is perfect for them! I replaced some amount of regular potatoes with sweet potato, which is lower in protein and I've used Violife's vegan cheese, which doesn't contain any protein! ☺ Regular potato (cooked in water)  1,80 g of protein  80 mg of Phe Sweet potato 1,57 g of protein 89 mg of Phe I've found it at  PKU Connect . Hmm...Could someone explain me why the sweet potatoes are higher in Phe that the regular potatoes, although they contain smaller amount of protein? Easy-peasy spaghetti recipe

Hi everyone!☺ Who doesn't like pasta? I don't know any person who doesn't like it! I have to admit that pasta is such a versatile and delicious thing. Good pasta needs just a simply additives, like fresh tomatoes, cheese, basil, fish, meat, tofu, lentils, fruits and favourite veggies! Today I'm going to show you a recipe for spaghetti with turkey ham, tomato sauce and Violife's Parmesan! You can skip meat in this dish and make a low protein version☺ Did you know that on the world is over 300 types of pasta? The oldest pasta was found in China, it was 20 inches long and it was 4000 years old!  The most popular pasta is of course wheat one, made from wheat flour, water, salt and, in some types, eggs. But people with dietary restrictions also can enjoy it! Now we can buy gluten free and low protein pasta in different shapes.  I've also tried low protein pasta in star shape and PKU rice from Aproten, which actually tastes like pasta too, and I really enjoyed it! ☺ M

Raisin loaf with sweet crumbles

Hi everyone!☺️ Are there any raisin lovers? Or yeast cake lovers? I know that people are divided into raisin lovers and raisin haters! I like raisins, they are full of magnesium, potassium and boron. Did you know that raisins contain resveratrol, an antioxidant that protects cells against damage? They also contain fiber (3,7 g per 100 g), so IBD people must be careful of big amounts of them in their diet.  Today I want to share with you a recipe for delicious gluten and dairy free yeast loaf with raisins and sweet crumbles! Orange flavoured gluten-free biscuits

Hi everyone! Today I have something yummy for orange and biscuits lovers - orange flavor gluten-free biscuits! Ta-daaa!☺ Gluten free biscuits are a perfect option when you are in exacerbation - they are lightly sweet, easy to digest and they aren't unfriendly for your ill bowels. They taste yummy with a cup of green tea or a cup of kissel. If you don't have orange extract, you're allergic to orange or if you aren't a huge fan of orange scent, you can easily use vanilla, cream, lemon or almond extracts & flavored oils. Lactose free cheesecake with chocolate dripping

Hi everyone! Who likes cheesecakes? I've never been a big fan of cheesecakes, but today's cake is so delicious! If you like cottage cheese, chocolate and p o t a t o e s you won't be disappointed. Potatoes, you say? Yes! Potatoes are great when you want to eat a fluffy and delicate cheesecake. It's also a cheaper version of traditional cake, because you need smaller amount of the cottage cheese☺ My cheesecake is a great source of protein, so important in inflammatory bowel diseases. Our guts aren't able to absorb nutrients from food - they have a bigger permeability compared to guts of a healthy person. We must eat more complete protein, when complete equals animal protein. We usually source them from dairy products, like milk, cheese and yoghurt, eggs or lean meat, like turkey or chicken.  My cheesecake is full of eggs, butter and cottage cheese, so it's a perfect choice for malnourished people. Gluten-free zebra biscuits

Hi everyone! Biscuits are great for any occasion! Fluffy, easy to make, gluten and dairy free, easily digestible and sooo yummy! I've created a recipe for biscuits with vanilla and cocoa flavor, but it's so many options and you can choose your favourite. Easily digestible carrot soup

Hi everyone! If you have colitis ulcerosa or Crohn's disease, you probably know what   e x a c e r b a t i o n   means... When mu bowels are in very bad condition, I usually eat kissels, biscuits, nutritional liquids and carrot soup.  Of course recipes for delicious biscuits/sponge cookies will appear on my blog soon! My carrot soup is very easy to digest and helps to stop diarrhea. It's also very delicate for stomach and prevents dehydration, which often accompanies  the diarrhea. Perfectly fluffy sponge cake

Hi everyone! Today I'm going to show you a recipe for perfectly fluffy sponge cake without gluten and dairy. I hope you will enjoy!  I have been suffering from an exacerbation of my guts for three days. Today I have ate baby groats with butter and rice flakes with cooked apple, but yesterday I baked a delicious gluten free sponge cake. It's fluffy, easy to digest and really tasty! Perfect when you want to eat something sweet, but your diet is  v e r y restrictive . My mum has said 'It tastes perfect!'☺Mum isn't a huge fan of sweet things, however she has really enjoyed it!  Lightly sweet, fluffy, delicate, gluten free, dairy free, lactose free and easily digestible. PKU friendly puff pastries

Hi everyone! A few weeks ago I've ordered a big box full of goods from  PKU Shop . In the package were cheeses from  Violife Foods , gluten free pasta, low protein rice from  Aproten Chicchi , low protein pasta stars from Aproten too, organic bechamel (rice based) sauce, cacao balls, coconut milk in powder and LOW PROTEIN GLUTEN FREE PUFF PASTRY!!!     I've never eaten gluten free puff pastry, I don't even remember the taste of the basic one, made using wheat and butter. To be honest, the composition is not the best, but once in a while it won't hurt, won't it? Mine puff pastry is from  Balviten , but once I saw gluten-free puff pastry from  Schar Gluten Free  and from  Genius Gluten Free , but they aren't available in my town:( The gluten free puff pastry, even when we know it's not always the healthiest option:), is a perfect solution when we have no time to prepare something tasty in a couple of minutes! Hi everyone! Do you like Indian food? Indian food is very aromatic, rich in colours and includes a lot of healthy veggies, which makes it perfect for PKUers! Hi guys! Have you ever heard about potato diet? This is a special medical diet used in gastrointestinal diseases, chronic renal failure and  in low protein diet. The base of this diet are potatoes in a lot of forms - cooked, puree, chips, baked potatoes, jacket potatoes etc.  Potatoes are a great source of potassium and are really healthy! They are easily digestible and they can help in digestive problems. When we cool down the potatoes, they contain bigger amount of resistant starch, which isn't digested in the intestines and becomes a a kind of prebiotic - foodie for good bacteria inhabiting our guts.
