Orange flavoured gluten-free biscuits

Hi everyone!

Today I have something yummy for orange and biscuits lovers - orange flavor gluten-free biscuits!

Ta-daaa!☺

Gluten free biscuits are a perfect option when you are in exacerbation - they are lightly sweet, easy to digest and they aren't unfriendly for your ill bowels. They taste yummy with a cup of green tea or a cup of kissel.

If you don't have orange extract, you're allergic to orange or if you aren't a huge fan of orange scent, you can easily use vanilla, cream, lemon or almond extracts & flavored oils. The kind of extract depends on your likes☺

This orange aroma is amazing!



What you need:

for about 25 cookies

3 eggs
2 headed tbsp of  corn flour (not corn starch!)
2 headed tbsp of potato starch (not potato flour!)
a pinch of salt
♡ 4 drops of natural orange extract (I've used this one, but use your favourite one)
♡ a little bit of orange zest (optionally, I didn't add)
2 tbsp of white sugar
a half of teaspoon of gluten free baking powder (I've used this one)
1 flat teaspoon of vanilla pudding in powder (I've used this one)



What you need to do:

  !  Preheat the oven to 180 degrees C/ 356 degrees F.

1. Beat the whites with a pinch of salt.♡

2. Add sugar and beat once more to get a stiff, silky and shiny foam.♡

3. Add yolks and mix on slow turns of your mixer.♡

4. Add flours and vanilla pudding. Mix gently. You should receive a sticky and thick mixture.♡

5. Add the orange extract (and the orange zest if used) and mix gently.♡

6. On baking tray lined with baking paper form wheels.♡

7. Put the cookies into the oven and bake for about 12-15 minutes until the cookies become dry inside. Enjoy! ♡


BAKING TIP 

♡ Bake the biscuits in two batches, because those below will become flat and pale. Bake them quite high, and then they will rise well and be plump. ☺

♡ Wait a moment before eating cookies. They should rest a little, because they are quite delicate.☺

PKU friendly strawberry rice

Hello! Today I'm sharing with you two recipes in one: for PKUers and for people who must eat a lot of protein. I promise each version is very tasty! Banana chunks in coconut batter with chocolate sauce

Hi everyone! Do you like Indian food? Indian food is very aromatic, rich in colours and includes a lot of healthy veggies, which makes it perfect for PKUers! It's also really spicy and hot, so I  m u s t  n o t  eat it on my diet:) For those of you who don't mind hot spices or love spicy food, Indian cuisine is a good choice. Mine are definitely bananas in coconut batter, but in tummy friendly version without frying in deep oil! Did you know that Indians love very sweet desserts?
