Banana chunks in coconut batter with chocolate sauce

Do you like Indian food? Indian food is very aromatic, rich in colours and includes a lot of healthy veggies, which makes it perfect for PKUers! It's also really spicy and hot, so I  m u s t  n o t  eat it on my diet:) For those of you who don't mind hot spices or love spicy food, Indian cuisine is a good choice. What's your favorite Indian dish? Maybe dahl,  veggie korma, curry, flat breads called 'naans', papadams or samosas? Mine are definitely bananas in coconut batter, but in tummy friendly version without frying in deep oil!

Did you know that Indians love very sweet desserts? I'm not a huge fan of very sweet desserts, but I absolutely love bananas in coconut batter! This recipe is inspired by an Indian dish called 'pakora', but I've used bananas instead of veggies, replaced chickpea flour with gluten free mix and I've fried them on dry pancake pan instead of frying in deep oil.  

Coconut milk batter, banana and chocolate are such a great combination of flavors and they make low protein or gluten free diet much more tastier and varied! The bananas in batter are lightly sweet, crunchy outside, soft inside, delicious and they taste perfect with homemade warm chocolate sauce. Yum!

You can easily make a PKU friendly version of this dish. You just need to replace an egg with some egg substitute in powder and use low protein flour, for example FATE, Bezgluten, Glutenex, Taranis, Mevalia or any other PKU flour. You can also make low protein chocolate sauce using Chocotino from Mevalia, Schoxxi from Metax or Vitabite energy bars from Vitaflo.


What a shame you can't smell this melted chocolate...Yum!


What you need:

2 small bananas (the riper the better)

Batter:
♡5 tbsp of gluten free universal flour/LP flour (I used Mehl Farine from Schar)
♡one egg/2 teaspoons of egg substitute mixed with 40 ml of water)
♡1 tbsp of melted butter/coconut oil
♡100 ml of coconut milk
♡a pinch of salt
♡1 tbsp of coconut shreds (optionally)
♡1/4 teaspoon of baking powder

Chocolate sauce:
♡ semi dark chocolate (I've used 50% of cocoa mass) / Vitabites
♡a little bit of coconut milk (about 2 tbsp)

For decoration:
♡powdered sugar

What you need to do:

SAUCE

1. Melt the chocolate with a little bit of coconut milk in the water bath or in microwave to get a smooth, silky sauce.♡

BANANA CHUNKS IN BATTER

1. Cut the banana into chunks.♡

2. Mix egg, coconut milk, butter, salt and baking powder. Add flour and coconut shreds and stir thoroughly. You should receive a   v e r y  thick mixture.♡

3. Put the banana chunks into the mixture and coat it in the batter.♡

4. Fry them on a dry frying pan. Serve with powdered sugar and chocolate sauce. Enjoy!♡

Turkey meatballs with creamy sweet potato purée

Hi everyone! Today I'm going to show you a recipe for easily digestible dinner - turkey meatballs with creamy sweet potato purée. This is my Mum's recipe, so I promise you will enjoy it!☺ As we know, meatballs won't be the best choice for people on a low protein diet, but I think that this creamy, cheesy sweet potato puree is perfect for them!
