MAG's oat cookies with coconut

Hello!
Do you like coconut? I'm not a big fan of it, but that cookies are amazing! Crunchy outside, soft inside, they taste pretty like digestives! My Mum have made them for me and I'm very happy to share the recipe with you:-)

The original recipe is from Mama Alergika Gotuje. I love MAG's blog and it's perfect for people with allergies or food intolerance!

What you need:
14 cookies

♡50 g of banana
♡1 tbsp of lemon juice
♡1 teaspoon of vanilla extract (Mum skipped)
♡25 g of white sugar*
♡50 ml of oil
♡75 g of gluten free oat flour
♡25 g of tapioca flour
♡25 g of coconut flakes
♡1/2 teaspoon of baking powder

*originally it's coconut sugar, but my Mum and I didn't have coconut sugar at home:-)

What you need to do:

1. Mash the banana and add the lemon juice and vanilla extract.♡
2. Add sugar and oil and mix everything.♡
3. Add coconut flakes, oat flour, baking powder and tapioca flour.♡
4. Mix the ingredients thoroughly.♡
5. Make balls from the dough. Then, form cookies.♡
6. Bake in 180 degrees C/356 degrees F for about 20 minutes.♡
7. Enjoy! ♡

Thank you very much Mama Alergika Gotuje for the recipe! ♡
