Fluffy American pancakes

Hello everyone!
Who doesn't love fluffy pancakes? Today's recipe is from my Mum! If you're a pancakes fan, you would love it!

What you need:
(Per 10-12 pancakes)
♡ 3 tbs gluten-free flour (I used Schar's Mix C Patissiere)
♡one small egg (white and yolk)
♡ a pinch of salt
♡ 1/2 bottle of your supplement (my Mum used neutral nutridrink)
♡ 1/4 teaspoon of baking powder
♡ 1 tbs of  butter/margarine
♡ to be served: fruit jam/chocolate sauce/fresh fruit/honey/maple syrup :-)

What you need to do:
1. Melt the butter and  cool it a little bit.♡
2. Separate the white from the yolk. Put the white into a bowl, add salt and whip to stiff foam.♡
3. Mix the yolk with the flour and add the supplement. Add melted butter.♡
4. Add the foam to the yolk, butter, flour&supplement mixture and mix gently.♡
5. Melt some butter in the pan and form little round pancakes. When they become gold, flip to the other side and fry a moment.♡
6. Serve with favourite toppings and enjoy!♡

♡You can replace the supplement with vegan yoghurt. If you can't eat eggs, use egg replacer or aquafaba.
